After Eight Chocolate Mint Mousse
Ingredients (Serves 4-6)
18 Squares After Eight-Mint Chocolate
250 ml Double cream
Using a bain-marie melt the chocolate squares and 2 tablespoons of cream in a medium sized bowl. Once completely melted, set aside to cool.
In another bowl whip up the remaining cream until light and fluffy, slowly add the melted, cooled chocolate and fold in carefully, taking care not to whip out the air from the cream.
Pour the mixture in your serving container, cover with cling film and chill for a minimum of 4 hours.
Best eaten after chilling overnight, you can serve it with an After Eight Mint square.
