1 ¼ cup Mashed Bananas (Made from 6 small bananas)
50 gm. (1.75 oz.) Brown sugar
½ cup Walnuts (Roughly chopped)
¼ tsp. Cinnamon powder
Melt butter in a small saucepan on medium heat. It will melt and foam and finally start turning brown (3-5 minutes). When it turns brown it will give off a nutty aroma. Cook for another minute and take off heat. Immediately pour the butter in a small pan and let cool
While the butter is cooling down, take a large bowl and combine all the dry ingredients ; flour, sugar, baking soda and cinnamon powder.
In another bowl combine the eggs, vanilla, yogurt and mashed bananas.
Tip the wet ingredients in the large bowl and mix well with a spatula. Now add in the cooled brown butter and mix again.
In a small bowl combine sugar, walnuts and cinnamon powder
Pour half of your batter in a buttered loaf tin, then spread out your streusel mixture evenly , finally topping it off with the other half of your batter.
Bake in a pre heated oven 180C (350 F) for 45-50 minutes. Once done, let cool in the baking tin and then take the loadf out carefully and further cool it down.
It is best eaten slightly warm and fresh. Can be refrigerated for about 3-4 days in an airtight container.
