Take half a cup of cooked brown rice and set it aside. You can replace this with white rice or other grains as well
Heat olive oil in a medium sized frying pan and throw in the spinach leaves, add some garlic and a pinch of salt. Stir around for a couple of minutes until completely wilted and gleaming with oil. Turn off heat and let cool
Once the spinach is cool, hold it in your palms and squeeze out any water that there might be. At this stage you can either mix the rice and spinach together with a fork or stack it up the way I did.
Top with feta just before serving. Also put seedless grapes and nuts alongside.
Finally give a drizzle of olive oil and lemon squirt and a grind of pepper.
