Heat oil, on medium heat in a small pan or skillet, then add the onion and fry till uniformly browned. Add a splash of water, followed by all the spices. Mix well to combine the spices and browned onions together (about 4-5 minutes). When you see a gravy forming, add the yogurt, another splash of water, cover and simmer for a couple of minutes.
Once done, add the chickpeas and mix well, ensuring that they are well covered with the gravy. Cover again and let simmer for 5-7 minutes, or until you see slight traces of oil appearing at the rim.
Crack an unda (egg) in a small cup and set aside.
Make a well in the center of the channa/chole mixture, increase heat and gently tip in the egg in the center of the pan. Let cook on high heat until you see the whites stiffening up.
Lower heat, cover and let cook until the whites are completely cooked, leaving the yolks slightly jiggly in the center (1 -2 minutes)
Serve immediately with fresh puris/naan and finely chopped vegetables.
Cold Soba Noodle Salad
Ingredients (Serves 1)
100 gm. (4 oz.) Soba Noodles
50 gm. (2 oz.) Prawns
½ tbsp. Oil
Sprinkle of salt, pepper and paprika
3 Crabsticks (Store bought)
½ tbsp. Sesame seeds
Sprigs of coriander
1 tbsp. Sesame oil
1½ tbsp. Soy sauce
½ tsp. Ginger (paste)
A sprinkle of sesame seeds
Boil soba noodles as per instructions on the packet. Set aside to cool.
In the mean time take a small pan, heat the oil, throw in the prawns, cook for a minute on each side, sprinkle on the salt, pepper and paprika. Cook for another minute and take off heat immediately.
Cut the crabsticks diagonally and set aside.
Make the dressing by combining all the ingredients in a small bowl and mixing well.
After your noodles have cooled down, assemble them in a plate, followed by the prawns and crabsticks, finally topped with sesame seeds and fresh coriander. Pour on the dressing just before serving.
Note: Ingredients for the salad and dressing can be prepared in advance. Dressing can be made in larger quantities and stored in the refrigerator, in an airtight jar for up to a week.
