Ingredients (Makes two muffins)
¼ cup Milk
¼ cup Cheese (I used grated cheddar)
3 tbsp. cooked mince (You are welcome to use chicken or vegetables instead)
½ tsp. Salt
½ tsp. Pepper
½ tsp. dried Basil
Combine egg, milk, grated cheese in a measuring jug, next add seasoning and the minced meat. Stir well with a spatula and pour in a greased muffin tin – about 2/3rd of the cup.
Bake in a pre-heated oven 180 C (350 F) for 30-35 minutes until done, or when a skewer inserted, comes out clean.
Once done, let cool in the tin, carefully take out and store in the refrigerator. Best eaten at room temperature. Stores well, refrigerated, for 2-3 days in an airtight container.
