Ingredients (Serves Friend and You – as a side dish)
200 gm Cauliflower florets
¾ Cup Flour
2 tbsp. Cornflour
1 tsp. Ginger paste
1 tsp. Garlic paste
Pinch of salt
¾ Cup water
2 cups of oil for frying
Sauce
1 tbsp. oil
2 tbsp. Soy sauce
3 ½ tbsp. Tomato ketchup
2 tbsp. Chilli garlic sauce (store bought)
1 ½ tbsp. Green chilli sauce (store bought)
Chopped spring onion for garnish
Method
Cut florets of the cauliflower and set aside
Combine flour, cornflour, ginger and garlic paste, salt in a large bowl. Add water to make a thick paste. Take care not to make it too runny. Also beware that flours have different strengths. So start by adding little water at a time.
Heat oil in a wok; dip the florets in the batter and fry until golden brown. You might have to work in batches. Strain and put the fried cauliflower on kitchen paper and cover.
Repeat until all are done Heat oil in medium saucepan. Add all the ingredients of the sauce and bring to a gentle simmer. Once the sauce is bubbling in excitement, add the fried florets and stir well.
Make sure all the pieces are well covered with sauce. Take out in a serving bowl or dish, top with chopped green spring onion and serve at once.
