Ingredients (Serves substantially, one Woman of Substance)
3 tbsp. Yogurt (Store bought)
½ tsp. Garlic paste
1 tbsp. Fresh mint (Chopped finely)
½ tsp. Salt
175 gm. Salmon Fillet
2 tbsp. Olive oil
To prepare the dressing put yogurt in a small cup, add the garlic paste, mint leaves and salt. Stir well and refrigerate. Use as required.
Wash and pat dry the fillet. In a small frying pan heat the olive oil. Gently place the fish on the hot oil, sprinkle some salt and freshly cracked pepper. Cover the fillet with a lid. Let it cook for 6 – 7 minutes.
Gently turn sides, sprinkle another round of seasoning and cover the fillet again. Cook for another 6 – 7 minutes.
Gently take out the pan-fried fish fillet and lay down on the plate. Spoon over some of the pre-prepared yogurt dressing on the fillet. Serve with brown rice and freshly cut avocado slices. And don’t forget to put some thinly cut lemon slices to complete the flavors.
