Papaya Salad
Ingredients (Serves 1)
½ Cup Green Papaya (Shredded)
2 long beans
1 Cherry Tomato (Quartered)
1 tbsp. Peanuts (finely chopped)
1 tbsp. Dried shrimps (Optional but highly recommended)
Dressing
1 ½ tbsp. Fish sauce
1 tbsp. Brown sugar (Ideally use palm sugar)
1 tbsp. Lime juice½ tbsp.
Finely chopped bird’s eye chilli
Method
Shred the papaya using a vegetable shredder or mandolin and set aside. Cut long beans on the diagonal , quarter the tomato and set aside. At this moment you can cover and leave the vegetables if making ahead of time.
Put all the vegetables in a ziplock bag and using a rolling pin gently stamp down the vegetables. The idea is to bruise them slightly so that the juices flow out and mingle together. The papaya is generally tasteless so can be dressed very elegantly with the sweet, salty and spicy dressing.
To make the dressing put all the ingredients in a small bowl and mix well until the sugar dissolves. Pour the dressing in the ziplock bag, shake well and spoon out salad on the serving dish. Sprinkle with peanuts and serve immediately. To be eaten immediately for a complete soothing effect to the mind and palate!
