Take a small bowl and tip in the yogurt mixing it with a hand whisk to get rid of any clumps. Next mix in the Nutella and mix well. Put the bowl in the refrigerator to chill until you prepare the rest.
Crush the Oreos in a food processor and set aside
Using the food processor or hand mixer again tip in your strawberries, vanilla and honey and blitz to your liking of chunkiness or smoothness.
For assembly take 4 glasses, and make layers of the crushed Oreos, yogurt mousse and strawberries just making sure that you finish with a strawberry layer.
These can be made a day or two in advance and will stay well refrigerated.
Ingredients (Makes about 8-10)
1 cup Flour
1 ½ tbsp. Sugar
½ tsp. Baking powder
¼ tsp. Salt
1 cup Ricotta
2 eggs (separated)
½ cup Milk
½ tsp. Vanilla
Butter to smear on the pan
Take a medium sized bowl and put all the dry ingredients in there.
In another bowl mix the Ricotta, egg yolks, milk and vanilla. Mix gently until combined.
Add the dry ingredients to the Ricotta mixture and mix until just combined
Whip up the egg whites to soft peaks and gently fold in the Ricotta and flour mixture.
Take a small pan and smear some butter on medium heat. Take about 1/3 cup of the pancake batter and pour in the hot pan. Let cook until you see small holes appearing, flip and cook the other side. Pour.Flip.Cook.Repeat
And once you are done, serve immediately with the choice of your fruit and other ornaments.
