Take a medium sized bowl and put all the dry ingredients in there.
In another bowl mix the Ricotta, egg yolks, milk and vanilla. Mix gently until combined.
Add the dry ingredients to the Ricotta mixture and mix until just combined
Whip up the egg whites to soft peaks and gently fold in the Ricotta and flour mixture.
Take a small pan and smear some butter on medium heat. Take about 1/3 cup of the pancake batter and pour in the hot pan. Let cook until you see small holes appearing, flip and cook the other side. Pour.Flip.Cook.Repeat
And once you are done, serve immediately with the choice of your fruit and other ornaments.
Sweet Potato & Ricotta Bites
1 sweet potato (steamed or boiled)
4 tbsp. Ricotta Cheese
1 tsp. Za’atar spice (you can use any herb)
Steam or boil the sweet potatoes until soft but not mushy. Once cool cut the potatoes in small discs and lay it out on a serving plate
In a small bowl mix together the ricotta and za’atar spice until uniformly mixed.
Spoon the ricotta mixture on the circular discs until you complete all
Just before serving, plop a drop of Sriracha or any other chili sauce available to you.
