Roast Beef Sliders with Mango & Jalapeño Sauce
Ingredients (One Janoo can snack on this)
2 Slider buns
70 gm. Roast beef
Cucumber (4 paper thin slices)
4 tsp. Mango and Jalapeno Sauce (Recipe follows)
Mango and Jalapeno Sauce (Makes about ½ a cup)
30 gm. Jalapeno (Chopped, I used bottled Jalapenos)
70 gm Mango (Chopped weight)
1 tsp. Honey
Put all the ingredients of the sauce in a blender or food processor and blitz until smooth. Set aside.
Set all the ingredients close by and prepare to put the sliders together.
Lightly toast the buns and set aside. Layer with roast beef, cucumber slices and the mango and jalapeno sauce. Top it with the other half of the bun and they are ready to eat.
The sauce will keep well for 3-4 days in the refrigerator.
Making Roast beef:
I use the filet mignon cut to make the roast beef. Ask your local butcher for the right cut of meat.
Wash and pat dry the meat. Liberally rub it with olive oil, salt and pepper. Bake in a preheated oven at 220 C for about 30 minutes.
Change the side of the meat and put it back in the oven at 180 C for 16 minutes per kilogram of meat, for well done results.
Once done, take it out of the oven and wrap the meat in aluminum foil for 20-30 minutes for the meat to cook further in its own heat.
Unwrap, cut into thin slices and your roast beef is ready. Roast beef freezes well for up to 4 weeks.
