Ingredients (Serves 1)
½ Cup Oats
½ Cup Almond Milk (You can use apple juice or even regular milk)
1 tbsp. raisins (soaked in water)
1 small Apple (Grated)
1 tbsp. Almonds (chopped)
1 tbsp. Honey
Take a small bowl and soak the oats overnight in almond milk.
When ready to eat, prepare your mix-ins and set aside.
The oats would have absorbed all the liquid overnight, add some more milk to loosen the mixture and adjust the consistency according to preference.
Mix in your raisins, grated apple and chopped nuts, finally to top it up with honey.
Stir and eat – best eaten when chilled!
Simple Egg Sandwich
1 Wholewheat loaf
1 Half-boiled egg
Handful of rocket leaves
Thinly sliced onions
Thinly sliced tomatoes
2-3 Olives (Sliced lengthwise)
2-3 Walnuts (Roughly chopped)
Olive oil for drizzling
Freshly cracked black pepper

As usual, couldn't be simpler, slighty toast the bread, throw in all the ingredients, eat!
