Whilst on the hunt for an ingredient beginning with W, many voted for walnuts – and while I was thinking of what to make with this particular super nut, I was also on a time machine and travelling back to the 80s. The cold but delicious Lahore winters, mounds of dry fruit, the gas heaters in my grandparents’ cosy homes and cousins galore and our indulgence retreat, the only fast food restaurant at that time – Salt ‘n’ Pepper. Unrivalled steaming, creamy mulligatawny soup, spicy chicken pocket sandwich, absolutely delectable Club Sandwich and the most incredible Walnut Tart I have had – to date!
And it was that tart what would feature on every winter based occasion – birthdays, barbeques, anniversaries – all would have the Walnut Tart from Salt n’ Pepper. A warm triangle of flaky pastry and gooey nuts dolloped with fluffed cream was one of the most comforting options available to us. I have yet to master myself at this divinity however, I have used walnuts for the below mentioned recipe along with a spiced mixture of onions and dried figs. Softflavours of the onion and figs lend their sweetness to spices and earthy nutty walnuts, a relish of sorts, it goes well with toasted bread but you can even add it to your rice curry dinner if you so desire.
