At a time when there had not been a food explosion in Lahore – it housed a brilliant, tightly packed, basemented Tex-Mex restaurant by the name of PATIO. The peach pink interior, general calmness, friendly waiters were definitely an advantage however, the fact that it was so close to our college gave us the comfort to eat in whenever we wanted to.
By ‘we’ I mean a bunch of crazy, laugh infested, songs crazed group who often bunked Human Resource classes for a lunch out at PATIO. My memory fails me in terms of what all they served however, what stands out even after so many years was their extremely juicy, spicy Beef Taco Salad. Chunks of minced fried beef, freshly cubed vegetables, shredded cheese; sour cream fluff all packed in a taco basket – HAPPINESS!
Happiness is having fond memories of the past – the kind that you can feel after decades and still chuckle over snippets that drove you mad with laughter so many years ago. Although I have not recreated the same salad here but whilst making this Taco basket – happy memories certainly flooded my mind.
I used a whole-wheat wrap, put it in a bowl, baked it at high temperatures for about fifteen minutes and then filled it up with some divine baked prawns. If time had permitted I would have churned a lovely green guacamole instead I sliced some fresh avocado, shredded some green leaves tossed them together with baked prawns and had a happy lunch!
