At a time the mind works like a whizz even when sleeping, a friend, coffee and food can often be the most grounding factors in one’s life – I would add yoga to that too but lets not go there for the time being.
Frayed nerves often sniff out comforting carbohydrates. The serotonin produced gives you the necessary anchor, making the day more bearable. Heavy doses of carbs are the most calming and settling foods sans the guilt that follows.
However, the joy of eating carbs is matchless, hence once in a while when you feel pressured, without a friend or coffee head over to the kitchen to prepare these lofty potatoes which are scooped off their flesh only to house mac’n’ cheese.
The potatoes are baked whole until the skin is wrinkled and the flesh inside is soft. Gently cut lengthwise, the potato goo is scooped out leaving about half an inch of it next to the skin. The craters are then gently brushed with melted butter and the choice of your filling is thrown in and grilled until the cheese has melted. I used boiled pasta topped with loads of shredded cheese and chili flakes. The skins are then flash grilled until the cheese has melted (about 5-7 minutes)
Used as a light lunch, starter to a meal or a comforting evening meal baking the potato takes much longer than eating it, however, it is worth the wait. Kids will love this. The skins can be prepared in advance and then the filling can be grilled just before eating
