Resplendent Ricotta Part 1 and Bowled over!

Recently Mr. A bowled me over, and that too on International Womens’ Day. We were invited to take part in a QnA series and cross verification of answers by each of the spouses. Pleasantly he got most of the answers right – and one of them believe it or not was about eggs. Which is going to be featured in todays’ recipe.
So the question was: ‘What kind of eggs does Saadia like, fried, scrambled or omelets’ and my answer was ‘If at all then Omelets’ which Mr. A correctly answered.
I find omelets rather wholesome. And also a cleaning exercise of short expiry items in the refrigerator. Throw in all kinds of spices and condiments in whipped eggs; cook them gently to yellow perfection and done. Single helping of simple, nutritious and absolutely vibrant eggs.
I picked up a tub of Ricotta cheese the other day from a local grocery shop and decided to prepare some simple dishes incorporating this versatile cheese. Eggily enough, the first item was scrambled eggs with ricotta cheese. Being an omelet fan I have always found its scrambled sibling rather boring, but not this one.
Creamy, moist, simply flavored this can certainly be your next weekend star. Crumbly ricotta hiding behind sunny bits of egg with some freshly crackled pepper and crisp bread. Certainly a ‘bowled over’ feeling!
