Resplendent Ricotta and masks

Masks have always been used to add an element of mystery, thrill, obscurity and elegance to dance balls, books, movies and most importantly relationships. Originating from the Carnival of Venice or the famous Venetian balls masks were used to conceal emotions, expressions and identity.
Nowadays more than ever, people might not actually be wearing masks yet they hide behind certain facades of perhaps self-preservation, honesty, deception and lies. So the good news is that for emotionally intelligent people it is very easy to peel away these negative masks and stare at reality right in the face. Bad news for the masquerade specialists though!
Coming back to food I have used sweet potato bites with flavored ricotta cheese. The goodness of sweet potatoes has always been masked due to its sheer relations with the good ol’ potatoes and undermined in a similar fashion. This dish is deceptively simple and you can’t help but admire the simplicity and sophistication of these little devils.
Whilst I ponder on some of the masks that I have come across and have managed to stare right through, why don’t you go ahead and make an attempt at these.
