1 tsp. Chilli flakes (I used 1 tbsp. because I love chilli)
1 ½ tbsp.White wine vinegar
1 tbsp. Balsamic vinegar
Salt/Pepper according to taste
2 tbsp. Chia Seeds
Add all the ingredients except for Chia (our star) in a medium saucepan and bring to boil. As soon as the tomatoes start bubbling, cover and simmer for 30 – 40 minutes or until the tomatoes are tender, but still floating in some liquid.
Take off heat and add the chia seeds and give it a good stir. Let cool and then you’re free to devour it.
Note: The relish should be kept refrigerated and will store for a week.
