Wash the cucumber thoroughly and slice off the round edges.
Scoop out the seeds with a teaspoon
Fill up the boats with thin salmon slices, toast some bread and eat!
Ingredients (Serves 1)
1 tbsp. Olive oil
150 gm. Zucchini (Shredded)
50gm. Broccoli florets
Handful of peanuts
Take a medium sized wok and heat the oil, throw in the broccoli and peanuts and stir on high heat (approx. 2 minutes)
Throw in a splash of water for additional steam to cook the broccoli, stir again
Although you can eat the zucchini noodles raw as well, but if you are cooking them, they just need to be jolted with heat. Throw in the noodles, season and take it out on a serving plate/dish immediately.
If you leave the noodles in for long, they will start to sweat.
